2. Catering Services
2.1 Overview
The Hotel has an excellent banquet operations department responsible for the catering arrangements of all events, including but not limited to the following items:
• Festive Dinner Events
• Weddings
• Social Events
• Meetings and seminars (including group breakfast, lunch, and dinner)
• Welcome and farewell receptions
• Staff meals
• Booth meals
• Food and Beverage Delivery
• Booth Reception
• Equipment Rental (water coolers, water dispensers, coffee machines, etc.)
2.2 No Outside Food and Beverage
The Hotel prohibits the bringing in of outside food for supply and sale within the Hotel premises. All food and beverages must be purchased from and supplied by the Hotel.
If the organizer needs to bring outside food into the Hotel for guests for any special reason, it must be approved by the Hotel and comply with all guidelines set by the Hotel.
2.3 Takeaway
All food and beverages provided during an event are not permitted to be packed as takeaway at any time, except for wedding banquet dishes otherwise approved by the Hotel, or pre-ordered meal boxes for the event group.
2.4 Guaranteed Number of Guests
"Guaranteed number of guests" is defined as the minimum number of guests committed to attend the event. All charges will be based on the "guaranteed number of guests" or the actual number of guests, whichever is greater.
If the guaranteed number of guests exceeds 100, the hotel will customarily prepare food (buffet) in an amount 2% above the guaranteed number of guests, up to a maximum of 50 additional portions.
If the guaranteed number of guests is fewer than 100, we will prepare the same amount of food (buffet) as the guaranteed number of guests.
2.5 Guaranteed number of guests — Notification period
The organizer must notify the hotel of the guaranteed number of guests within the specified time before the event:
1. If the number of attendees is fewer than 1,000 guests, notification must be given no later than 12:00 noon on the 5th working day before the event. Saturdays, Sundays, and public holidays are not counted as working days.
2. If the number of attendees is more than 1,000 guests, notification must be given no later than 12:00 noon on the 7th working day before the event. Saturdays, Sundays, and public holidays are not counted as working days.
A longer notification period may be required for reasons including but not limited to menu complexity, holidays, delivery issues, etc.
If the organizer does not notify the hotel of the guaranteed number of guests, we will use the estimated number provided by the organizer as the final guaranteed number of guests.
2.6 Guaranteed number of guests — Reduction
Once the organizer has confirmed the guaranteed number of guests, it cannot be reduced.
If the organizer reduces the guaranteed number of guests by 15% or more, the hotel reserves the right to charge venue rental, other service-related fees, and/or relocate the event to a smaller venue.
2.7 Guaranteed Number of Guests — Increase
If the organizer increases the guaranteed number of guests by 3% or more, the hotel will charge additional fees according to the following terms and conditions:
1. If the organizer notifies the hotel of an increase in the guaranteed number of guests 1 to 2 working days before the event, an additional fee of 10% will be charged.
2. If the organizer notifies the hotel of an increase in the guaranteed number of guests on the day of the event, an additional fee of 15% will be charged.
In certain circumstances, if notification is given with insufficient time, the hotel may not be able to provide the same food after the increase in the guaranteed number of guests; such food will be replaced at the chef's discretion.
2.8 Banquet Menu
For detailed menus, please contact the project manager.
Special menus: The hotel can customize special menus according to special requirements (e.g., religious). Additional charges may apply for special menus, depending on the availability of relevant ingredients and/or religious organizations.
Chinese menu: The Chinese menu is charged per table rather than per person. If most guests at the same table dine on Chinese cuisine while some guests dine on special dishes, the special menu charge will be added to the standard per-table charge.
Changing the Chinese or buffet menu to a business set menu: This arrangement requires food to be plated individually in the kitchen and served by banquet waitstaff, so an additional surcharge of 30% of the menu price will be charged.
2.9 Beverage Packages
All beverage packages are charged per person per hour. Once beverage service has commenced, this service cannot be paused midway.
Hotel staff will confirm with the organizer 15 minutes before the end time of the purchased beverage package whether the beverage package needs to be extended.
In certain circumstances, the grace period applies to 5 minutes. If it exceeds 5 minutes, an additional one-hour beverage package fee will be charged.
2.10 Menu Prices
Menu prices are subject to increase in accordance with rises in costs, including but not limited to the cost of food and beverages, commodity prices, salary expenses, taxes, and currency exchange rates.
Based on the above reasons, the organizer must authorize the Hotel to increase or appropriately modify the banquet menu prices, and agree to such increases and accept the relevant changes.
Menu prices and food items are subject to change at any time without prior notice.
2.11 Menu Prices – Charges for Children
The Hotel does not provide a dedicated banquet menu for children, but offers the following concessions for children aged 3 to 11:

The final discount is subject to the menu selection and confirmed by the Hotel.
Full price of beverage orders

Full charges for both food and beverages
2.12 Banquet Event Order (BEO)
The BEO will be provided to the organizer in advance. The organizer must sign the BEO to confirm the order requirements before the service is provided.
2.13 Last-Minute Orders
The definition of a "last-minute order" is any menu booked within 5 working days before the event, subject to special menu options and pricing.
2.14 Banquet venue setup
If the same event venue requires more than one setup within the same event day, additional charges will apply.
2.15 Last-minute changes
If the organizer has any last-minute requests, such as temporarily changing the entire venue setup, replacing tablecloths or chair covers, etc., the hotel will make every effort to accommodate last-minute requests depending on the availability of manpower and furniture/equipment. Additional charges will be communicated accordingly.
2.16 Banquet service staff ratio
The following are the service staff ratios for all banquet events:
Business breakfast One service staff per 20 guests
Buffet breakfast One service staff per 20 guests
Business lunch One service staff per 10 guests
Buffet lunch One service staff per 10 guests
Chinese lunch One service staff per 10 guests
Business dinner One service staff per 10 guests
Buffet Dinner One server per 10 guests
Chinese Dinner One server per 10 guests
Business Cocktail Dinner One server per 30 guests
2.17 Banquet Service Time Limits
Unless otherwise explicitly agreed between the organizer and the hotel, the standard banquet service time ranges are as follows:
Tea Break Menu 30 minutes
Cocktail Reception Menu 45 minutes
Buffet Menu 2.5 hours
2.18 Cash Food Sales
If the organizer requests food carts or lunch counters operating on a cash payment basis, a setup fee of MOP $5,000 will be charged per cart or per buffet line. If total sales exceed MOP $10,000, the $5,000 setup fee will be waived.
The hotel will determine the menu and quantity of food for such food sales.
2.19 Food and Beverage Samples and/or Sales by the Organizer and Exhibitors
Depending on the nature of the event and subject to hotel approval, the organizer and exhibitors may conduct food and beverage sampling and/or sales activities. For the relevant terms, please obtain the "Food and Beverage Sampling and/or Sales – Application Agreement" from the hotel.
